Let’s be honest: after a few days of glorious Carbonara and thin-crust Pizza Romana, your soul (and your stomach) might start screaming for something different. You want that crispy, salty, caramelized edge that only a perfectly pressed patty can provide.

The “Smashburger” trend has taken the Eternal City by storm, but not all patties are created equal. As part of our Best in Rome mission, I’ve personally tested the city’s grills to bring you the only 5 spots you actually need to visit.

No “gourmet” fluff—just meat, heat, and the perfect bun.

1. Cheebo: The Golden Standard

If there was a “Michelin Star” for the most consistent smash in Rome, Cheebo would take it.

  • The Vibe: Modern, clean, and extremely focused on quality.
  • The Secret: Their meat-to-fat ratio is legendary. It results in a patty that is incredibly juicy on the inside but has that “lace-like” crispy skirt on the outside.
  • Best in Rome Tip: Their classic cheeseburger is a masterclass in balance. Don’t overcomplicate it with extra toppings.

2. Bar Sota: The Cool Kid in Prati

Located in the elegant Prati district, Bar Sota has quickly become the place to see and be seen while holding a greasy wrapper.

  • The Vibe: Minimalist, trendy, and very “New York meets Rome.”
  • The Secret: They use a high-temperature sear that locks in the flavor instantly. The potato roll they use is arguably the softest in the city.
  • Best in Rome Tip: It’s a small spot and very popular with locals, go early or be prepared to eat your burger leaning against a Roman wall (which is honestly part of the fun).

3. Donts (Trastevere): The Crowd Favorite

You cannot talk about street food in Trastevere without mentioning Donts. It’s the quintessential “neighborhood smash.”

  • The Vibe: High energy, fast-paced, and perfectly located for a night out.
  • The Secret: Their “Donts Sauce” is addictive. It provides that tangy kick that cuts right through the richness of the beef.
  • Best in Rome Tip: It’s the perfect “fuel” before heading to the bars in Trastevere.

4. Luppolo Station: The Craft Beer King

This is the “insider’s” choice. Luppolo Station is famous for having one of the best craft beer selections in Italy, but their kitchen is a hidden powerhouse.

  • The Vibe: Industrial-railway style, cozy, and great for a long sit-down session.
  • The Secret: Unlike many fast-casual spots, Luppolo treats their burger like a main course. The sear is aggressive, and the pairing with their rotating taps is unbeatable.
  • Best in Rome Tip: Ask the staff which IPA or Sour goes best with your burger. They are experts.

5. Chuck’s: The American Soul

Chuck’s feels like a slice of a classic American burger joint dropped into the middle of Rome.

  • The Vibe: Bold branding, retro feels, and pure comfort food.
  • The Secret: They nailed the “nostalgia” factor. It tastes exactly like the best burger you’d find in a high-end US diner, but with the superior quality of Italian beef.
  • Best in Rome Tip: Their fries are some of the crispiest in town—don’t skip them.
